Cinnamon Coffee Cake

Ingredients

Cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 1 large egg
  • 1 tsp vanilla extract

Cinnamon Streusel Topping:

  • ½ cup brown sugar
  • ⅓ cup all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ cup cold butter, cubed

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add butter, milk, egg, and vanilla. Mix until just combined.
  4. Spread batter into the prepared pan.
  5. For the streusel, combine brown sugar, flour, and cinnamon. Cut in cold butter until crumbly.
  6. Sprinkle streusel evenly over the batter.
  7. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool slightly before serving.

Hot Apple Pie

Ingredients

For the Filling:

  • 6 cups apples, peeled and sliced
  • ¾ cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp lemon juice

For the Crust:

  • 2 prepared pie crusts (or homemade)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, toss apples with sugar, flour, cinnamon, nutmeg, and lemon juice.
  3. Fit one pie crust into a 9-inch pie dish.
  4. Fill with the apple mixture and dot with 1 tbsp butter if desired.
  5. Cover with the second crust. Seal and crimp the edges.
  6. Cut a few slits in the top crust to allow steam to escape.
  7. Bake for 15 minutes at 425°F (220°C).
  8. Reduce heat to 350°F (175°C) and bake for an additional 35–40 minutes, until golden brown and bubbly.
  9. Let cool for at least 30 minutes before slicing.
