Cinnamon Coffee Cake
Ingredients
Cake:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter, softened
- 1 cup milk
- 1 large egg
- 1 tsp vanilla extract
Cinnamon Streusel Topping:
- ½ cup brown sugar
- ⅓ cup all-purpose flour
- 1 tsp ground cinnamon
- ¼ cup cold butter, cubed
Instructions
- Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- Add butter, milk, egg, and vanilla. Mix until just combined.
- Spread batter into the prepared pan.
- For the streusel, combine brown sugar, flour, and cinnamon. Cut in cold butter until crumbly.
- Sprinkle streusel evenly over the batter.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool slightly before serving.
Hot Apple Pie
Ingredients
For the Filling:
- 6 cups apples, peeled and sliced
- ¾ cup granulated sugar
- 2 tbsp all-purpose flour
- 1 tsp ground cinnamon
- ¼ tsp nutmeg
- 1 tbsp lemon juice
For the Crust:
- 2 prepared pie crusts (or homemade)
Instructions
- Preheat oven to 425°F (220°C).
- In a large bowl, toss apples with sugar, flour, cinnamon, nutmeg, and lemon juice.
- Fit one pie crust into a 9-inch pie dish.
- Fill with the apple mixture and dot with 1 tbsp butter if desired.
- Cover with the second crust. Seal and crimp the edges.
- Cut a few slits in the top crust to allow steam to escape.
- Bake for 15 minutes at 425°F (220°C).
- Reduce heat to 350°F (175°C) and bake for an additional 35–40 minutes, until golden brown and bubbly.
- Let cool for at least 30 minutes before slicing.
