Recipe: Creamy Taco Skillet

Instructions:

  1. Brown the Meat: In a large skillet over medium-high heat, heat the oil. Add your chosen ground meat (chicken, beef, or turkey). Cook, breaking it up with a spoon, until it is no longer pink. Drain any excess grease if using higher-fat beef.
  2. Sauté Aromatics: Add the diced onion and optional green bell pepper to the skillet with the meat. Cook for 4-5 minutes, until the vegetables begin to soften.
  3. Add Garlic & Seasoning: Add the minced garlic and taco seasoning. Stir constantly for about 1 minute until the garlic is fragrant.
  4. Add Liquids & Tomatoes: Pour in the beef broth and add the chopped tomato or canned Rotel (undrained). Scrape the bottom of the pan to incorporate any browned bits. Bring the mixture to a simmer.
  5. Simmer: Reduce the heat to low, cover, and let it simmer for 10-15 minutes to allow the flavors to meld.
  6. Add Creaminess:
    • If using HEAVY CREAM: Stir in the 1 cup of heavy cream. Let it heat through for 2-3 minutes until the sauce is warm and slightly thickened. Do not boil vigorously.
    • If using CREAM CHEESE: Add the softened cream cheese in small chunks. Stir continuously until the cream cheese has completely melted into the sauce, creating a thick, creamy consistency.
  7. Final Seasoning: Taste the dish and add salt and pepper as needed. Remember, taco seasoning and broth already contain salt.
  8. Serve: Serve immediately on its own, over cauliflower rice, with low-carb tortillas, or topped with your favorite garnishes like shredded cheese, avocado, sour cream, or cilantro.
