Ingredients (3–4 servings)
- 1½ lb (680 g) chicken breast
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1½ tsp fajita seasoning
- ½ tsp salt
- ½ tsp black pepper
- ½ cup chicken broth
- 2 cups cooked rice or cauliflower rice
Instructions
- Add chicken, bell peppers, onion, and garlic to a slow cooker.
- Drizzle with olive oil and sprinkle fajita seasoning, salt, and pepper.
- Pour in chicken broth.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Shred chicken inside the slow cooker and mix well.
- Serve over rice or cauliflower rice.
