Ingredients (2–3 servings)
Salad Base
- 2 cups romaine or iceberg lettuce, chopped
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 carrot, shredded
- ½ red onion, thinly sliced
- ½ cup sweet corn (optional)
- ½ cup chickpeas or boiled chicken (for protein)
