  • 8–10 large eggs
  • 1 cup diced ham
  • ½ cup shredded cheddar cheese
  • ¼ cup shredded mozzarella or Colby-Jack

Veggies & Seasoning

  • ¼ cup chopped green bell pepper
  • ¼ cup finely chopped onion
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven
    Preheat your oven to 350°F (175°C). Lightly grease a muffin tin or use silicone egg molds.
  2. Whisk the eggs
    Crack the eggs into a bowl, season with salt and pepper, and whisk until fully combined.
  3. Add fillings
    Stir in the diced ham, cheeses, bell pepper, and onion until evenly mixed.
  4. Fill the cups
    Pour the mixture into the muffin cups, filling each about ¾ full.
  5. Bake
    Bake for 18–22 minutes, or until the centers are set and lightly golden.
  6. Cool & serve
    Let cool for a few minutes, then pop them out and enjoy.
