Instructions

Preheat the oven
Preheat your oven to 350°F (175°C). Lightly grease a muffin tin or use silicone egg molds. -
Whisk the eggs
Crack the eggs into a bowl, season with salt and pepper, and whisk until fully combined. -
Add fillings
Stir in the diced ham, cheeses, bell pepper, and onion until evenly mixed. -
Fill the cups
Pour the mixture into the muffin cups, filling each about ¾ full. -
Bake
Bake for 18–22 minutes, or until the centers are set and lightly golden. -
Cool & serve
Let cool for a few minutes, then pop them out and enjoy.
