- 4 cups (1 liter) full-fat milk
- 4 large eggs
- ½ cup sugar
- 1 tsp vanilla extract

- In a bowl, whisk eggs and sugar until smooth (don’t overbeat).
- Warm the milk slightly (not hot), then slowly whisk it into the egg mixture.
- Add vanilla and a pinch of salt.
- Pour into a buttered baking dish.
- Place the dish in a larger tray filled with hot water (water bath).

- Cool slightly before slicing — it firms up beautifully.
