A creamy, cheesy baked spinach dish with a light custard texture and rich Italian flavor.
🧾 Ingredients
- 2 cups fresh spinach (chopped)
- 1 cup ricotta cheese (part-skim)
- ½ cup grated parmesan
- ½ cup shredded mozzarella
- 2 large eggs
- 2 cloves garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp nutmeg (optional but classic)
- 1 tbsp olive oil (for greasing)
🔥 Instructions
1. Prep the oven
Preheat to 180°C (350°F).
Lightly grease a small baking dish with olive oil.
2. Cook the spinach
In a pan over medium heat, sauté spinach for 1–2 minutes until wilted.
Let it cool slightly, then squeeze out excess water.
3. Mix the filling
In a bowl, combine:
- Ricotta
- Parmesan
- Mozzarella
- Eggs
- Garlic
- Salt, pepper, nutmeg
- Cooked spinach
Mix until everything is evenly blended.
4. Bake
Pour mixture into the baking dish and smooth the top.
Bake for 25–30 minutes, until set and lightly golden on top.
5. Rest & serve
Let it cool for 5–10 minutes before slicing. This helps it firm up nicely.
