Ingredients
- 2 boneless skinless chicken breasts, cut into chunks
- 2 cups broccoli florets
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, chopped
- 2 carrots, sliced
- 2 small potatoes, diced
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper, to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 425°F (220°C).
- Place chicken and vegetables on a large baking tray or roasting pan.
- In a small bowl, mix olive oil, garlic, Italian seasoning, paprika, salt, and pepper.
- Pour seasoning mixture over everything and toss well to coat evenly.
- Roast for 25–30 minutes, stirring halfway through, until chicken is cooked and vegetables are tender with crispy edges.
- Garnish with fresh parsley and serve hot.
