Ingredients
1 cup raw almonds
½ cup walnuts, chopped
½ cup pumpkin seeds (pepitas)
½ cup sunflower seeds
2 tbsp sesame seeds
½ cup chopped dried apricots (no sugar added)
¼ cup chopped dates
2 tbsp honey or sugar-free maple syrup
1 egg white
1 tsp vanilla extract
½ tsp cinnamon
Pinch of salt
Instructions
Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
In a large bowl, combine almonds, walnuts, pumpkin seeds, sunflower seeds, sesame seeds, apricots, and dates.
In a separate bowl, whisk together the egg white, honey (or syrup), vanilla, cinnamon, and salt.
Pour the wet mixture over the dry ingredients and stir until evenly coated.
Scoop about 2 tablespoons of mixture and press firmly into round cookie shapes.
Place on the prepared baking sheet.
Bake for 15–18 minutes, until lightly golden.
Cool completely before removing—they firm up as they cool.
