🥗 Grilled Chicken Avocado Tomato Salad

🧾 Ingredients

Chicken:

  • 1.5 lb chicken breasts, pounded to ¾ inch thickness
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder

Salad:

  • 2 large avocados, chunked
  • 2 cups cherry tomatoes, quartered
  • ¼ red onion, finely diced
  • 2 tbsp chopped cilantro

Dressing:

  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • Pinch of salt & pepper (optional)

🔥 Instructions

1. Marinate the chicken

In a bowl, mix olive oil, cumin, chili powder, salt, pepper, and garlic powder.
Coat chicken evenly and let it sit for 15–30 minutes (longer = more flavor).


2. Grill the chicken

Heat a grill pan or skillet over medium-high heat.
Cook chicken for 5–7 minutes per side, or until fully cooked and nicely charred.
Let it rest for 5 minutes, then slice.


3. Make the salad

In a large bowl, combine:

  • Avocados
  • Cherry tomatoes
  • Red onion
  • Cilantro

Gently toss so the avocado doesn’t mash.


4. Prepare dressing

Mix:

  • Lime juice
  • Olive oil
  • Minced garlic
  • Salt & pepper

Whisk well.


5. Assemble

Add sliced grilled chicken on top of the salad.
Drizzle with dressing and gently toss or serve layered.


🍽️ Serving idea

Best served fresh and slightly chilled. You can also add tortilla strips or feta cheese if you want extra texture or richness.
