  • 1 large ripe banana, mashed (0 points)
  • ½ cup unsweetened applesauce (instead of ½ cup butter, saves points)
  • 2 large eggs (0 points on most plans)
  • ½ cup crushed pineapple, drained well (natural juice, not syrup – 0 points)
  • 2 tbsp unsweetened shredded coconut (~2 points total)
  • 1 ½ cups all-purpose flour (or use 1 cup flour + ½ cup Kodiak Cakes for extra protein)
  • ½ cup sugar substitute (monk fruit, stevia, or erythritol – 0 points)
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan.
  2. In a bowl, mash banana. Stir in applesauce, eggs, vanilla, and sugar substitute until smooth.
  3. Add flour, baking soda, and salt. Mix until just combined.
  4. Gently fold in pineapple and coconut.
