- 1 tbsp olive oil
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 4 cups broccoli florets
- 4 cups vegetable broth
- 1 cup shredded carrots
- 1 cup plain Greek yogurt
- 2 cups shredded sharp cheddar cheese
- ½ cup milk
- ½ tsp salt
- ¼ tsp black pepper
Instructions
1. Sauté the Aromatics
Heat the olive oil in a large soup pot over medium heat.
Add the diced onion and cook for 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
2. Cook the Vegetables
Add the broccoli florets, shredded carrots, and vegetable broth.
Bring the soup to a gentle boil, then reduce the heat to low. Cover and simmer for 10–15 minutes, or until the broccoli is tender.
3. Blend the Soup
Using an immersion blender, blend the soup until smooth and creamy.
For a heartier texture, blend only half of the soup, leaving some broccoli pieces intact.
4. Add the Dairy
Reduce the heat to low.
Stir in the Greek yogurt, shredded cheddar cheese, and milk. Cook gently, stirring frequently, until the cheese has completely melted and the soup is smooth and creamy.
Avoid boiling after adding the yogurt to prevent it from curdling.
5. Season and Serve
Season with salt and black pepper to taste.
