High-Protein Comfort Soup

Ingredients

  • 1 lb lean ground chicken or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can diced tomatoes
  • 2 cups cabbage, chopped
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 1 cup spinach or kale
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, cooking until softened.
  3. Add the ground chicken or turkey and cook until browned.
  4. Stir in carrots, celery, cabbage, diced tomatoes, broth, and Italian seasoning.
  5. Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
  6. Stir in spinach or kale during the last 2 minutes of cooking.
  7. Taste and season with salt and pepper.
