Ingredients
- 1 lb lean ground chicken or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 can diced tomatoes
- 2 cups cabbage, chopped
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- 1 cup spinach or kale
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, cooking until softened.
- Add the ground chicken or turkey and cook until browned.
- Stir in carrots, celery, cabbage, diced tomatoes, broth, and Italian seasoning.
- Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
- Stir in spinach or kale during the last 2 minutes of cooking.
- Taste and season with salt and pepper.
