A fresh, spicy salsa made with blended tomatoes, chilies, garlic, and herbs, slowly simmered for a rich and balanced flavor. Perfect as a dip, topping, or marinade.

Ingredients

  • 4 medium tomatoes (about 1 1/4 lb. total), seeded and cut up
  • 1 medium onion, cut up
  • ¼ cup snipped fresh cilantro or parsley
  • 1 to 2 fresh jalapeño or serrano chile peppers, seeded and halved
  • 2 cloves garlic, minced
  • 2 Tbsp. lemon juice
  • 1 Tbsp. snipped fresh oregano or 1 tsp. dried oregano, crushed
  • 1 bay leaf
  • ½ tsp. sugar
  • ¼ tsp. salt

Directions

  • Blend tomatoes in a blender or food processor until coarsely chopped.
  • Add onion, cilantro, chile peppers, and garlic; blend again until finely chopped.
  • Transfer mixture to a saucepan. Stir in green pepper, lemon juice, oregano, bay leaf, sugar, and salt.
  • Bring to a boil, then reduce heat and simmer uncovered for about 30 minutes.
  • Remove bay leaf. Let cool slightly.
  • Refrigerate for at least 1 hour before serving.

Notes

  • Adjust heat by choosing jalapeños for medium spice or serranos for extra heat.
  • Texture can be adjusted by shortening or extending simmer time.
  • Stores well in an airtight container in the fridge for up to 1 week.
  • Flavor deepens after a few hours of resting.
