This is the bread basket that makes people forget you’re low carb.
Each roll bakes up fluffy and tender on the inside with a golden, cheesy crust that gets all toasty on top. They’re brushed with garlic butter and flecked with herbs, and when you pull one off, strings of melted cheese follow.
Set this pan in the middle of the table and watch it disappear. 2g net carbs per roll and they taste like garlic bread’s hotter cousin.
What You’ll Need
Makes 12 rolls, ∼2g net carbs each
For the dough:
1 1/2 cups shredded mozzarella – low moisture, part skim
2 oz cream cheese – softened
3/4 cup blanched almond flour – superfine
1 tbsp baking powder – for the rise
1 large egg – room temp works best
1/2 tsp garlic powder – dough needs flavor too
For the cheesy garlic top:
3 tbsp butter, melted – salted
1 tsp garlic powder – or 2 cloves minced
1 tsp dried parsley or Italian seasoning – for those green flecks
1 cup shredded cheddar + mozzarella mix – for the melty top like the image
How to Make It
Step 1: Make fathead dough
Preheat oven to 375°F. Grease a 9-inch round cake pan. Microwave mozzarella and cream cheese 60 seconds. Stir until smooth. Add almond flour, baking powder, egg, and garlic powder. Mix until a dough forms.
Step 2: Roll the balls
Divide dough into 12 pieces. Roll each into a ball with oiled hands so they don’t stick. Place them in the pan with a little space between each.
Step 3: Garlic butter time
Mix melted butter, garlic powder, and half the parsley. Brush half of it over the tops of the dough balls.
Step 4: Cheese it up
Sprinkle the shredded cheddar + mozzarella mix generously over all the rolls. Make sure it gets in the cracks.
Step 5: Bake
Bake 18-22 minutes until rolls are golden brown, puffed, and the cheese on top is bubbly and toasted like the photo.
Step 6: Finish
Brush with remaining garlic butter and sprinkle rest of the parsley right out of the oven. Let cool 5 minutes so they set up.
Pro Tips to Level Up
Extra pull: Stuff a small cube of mozzarella inside each dough ball before rolling. Cheese surprise in the middle.
Crispier tops: Broil 1 minute at the end. Watch it close so it doesn’t burn.
Flavor twist: Add 2 tbsp grated parmesan to the cheese mix for a saltier, nuttier crust.
Make ahead: Assemble in the pan, cover, and fridge overnight. Bake 3 extra minutes from cold.
Serving move: Put the whole pan on the table and let everyone tear off their own. That’s the point.
This is what you make when “bring a side dish” turns into “you’re in charge of bread forever.”
