Festive little cakes with layers of vanilla cream, all low-carb & sugar-free – a holiday classic made keto!
For the Cakes:
1 cup almond flour
2 tbsp coconut flour
¼ cup erythritol or keto sweetener
½ tsp baking powder
Pinch of salt
2 eggs
¼ cup butter, melted
¼ cup unsweetened almond milk
1 tsp vanilla extract
For the Filling:
½ cup heavy cream
2 tbsp powdered sweetener
½ tsp vanilla extract
Coating (Optional):
Sugar-free white or dark chocolate, melted
Green food coloring (natural or keto-friendly)
Sprinkles (sugar-free, optional)
Instructions:
Step 1: Bake the Cakes
Preheat oven to 350°F (175°C). Grease a mini cake or sheet pan.
Mix all cake ingredients into a smooth batter. Spread evenly if using a pan.
Bake 15–18 min or until golden and firm. Cool completely.
Step 2: Cut & Layer
Cut out tree shapes with a cookie cutter. Whip cream, sweetener, and vanilla until stiff peaks form.
Spread cream between two cake layers to make little sandwiches.
Step 3: Decorate
Dip or drizzle with melted chocolate (tinted green if desired). Add sprinkles if using. Chill to set.
