- 4 salmon fillets (skinless or skin-on)
- 1 lb baby potatoes, halved
- 2 cups broccoli florets
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt & black pepper, to taste
For the Lemon Butter Sauce:
- 2 tbsp butter (melted)
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 2 cloves garlic, minced
- 1 tbsp chopped parsley (optional)
๐ฉโ๐ณ Directions
- Preheat oven to 400ยฐF (200ยฐC). Line a large baking sheet with parchment paper.

Prepare the potatoes:
Toss baby potatoes with 1 tbsp olive oil, garlic powder, salt, and pepper.
Spread on the baking sheet and roast for 15 minutes. -
Add broccoli and salmon:
After 15 minutes, push the potatoes to one side.
Add broccoli florets and drizzle with 1 tbsp olive oil, salt, and pepper.
Place salmon fillets in the center. -
Make the lemon butter:
In a small bowl, mix melted butter, lemon juice, zest, and minced garlic.
Brush over the salmon fillets generously. -
Roast everything:
Bake for another 10โ12 minutes, or until salmon flakes easily with a fork and potatoes are golden. -
Serve:
Drizzle any remaining lemon butter sauce from the pan over the top and sprinkle with parsley.
