  • 4 salmon fillets (skinless or skin-on)
  • 1 lb baby potatoes, halved
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt & black pepper, to taste

For the Lemon Butter Sauce:

  • 2 tbsp butter (melted)
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 cloves garlic, minced
  • 1 tbsp chopped parsley (optional)

๐Ÿ‘ฉโ€๐Ÿณ Directions

  1. Preheat oven to 400ยฐF (200ยฐC). Line a large baking sheet with parchment paper.
  2. Prepare the potatoes:
    Toss baby potatoes with 1 tbsp olive oil, garlic powder, salt, and pepper.
    Spread on the baking sheet and roast for 15 minutes.
  3. Add broccoli and salmon:
    After 15 minutes, push the potatoes to one side.
    Add broccoli florets and drizzle with 1 tbsp olive oil, salt, and pepper.
    Place salmon fillets in the center.
  4. Make the lemon butter:
    In a small bowl, mix melted butter, lemon juice, zest, and minced garlic.
    Brush over the salmon fillets generously.
  5. Roast everything:
    Bake for another 10โ€“12 minutes, or until salmon flakes easily with a fork and potatoes are golden.
  6. Serve:
    Drizzle any remaining lemon butter sauce from the pan over the top and sprinkle with parsley.
