🧆 Mediterranean Spinach & Feta Crisps

Ingredients

  • 1 cup fresh spinach, washed and chopped
  • ½ cup crumbled feta cheese
  • ¼ cup all-purpose flour
  • ¼ cup grated Parmesan cheese
  • 2 large eggs, beaten
  • ¼ tsp garlic powder
  • ¼ tsp dried oregano
  • Salt & pepper to taste
  • Olive oil spray

Instructions

  1. Prep the mixture
    In a mixing bowl, combine chopped spinach, feta, flour, Parmesan, garlic powder, and oregano. Season lightly with salt and pepper (remember: feta is salty).
  2. Add the eggs
    Pour in the beaten eggs and mix until everything is evenly coated and forms a scoopable batter.
  3. Shape the crisps
    Line a baking sheet with parchment. Scoop tablespoon-sized portions and gently flatten into small discs.
  4. Spray & bake
    Lightly mist the tops with olive oil spray.
    Bake at 400°F (200°C) for 10–12 minutes, until golden and crisp around the edges.
  5. Cool slightly
    Let them sit for 2–3 minutes so they firm up before serving.

⭐ Optional Add-Ins (to make them even more addictive)

  • 1 tbsp finely chopped sun-dried tomatoes
  • 1 tbsp chopped dill or fresh parsley
  • 1–2 tbsp breadcrumbs for extra crunch
  • A pinch of chili flakes for a kick
