Ingredients
- 1 cup fresh spinach, washed and chopped
- ½ cup crumbled feta cheese
- ¼ cup all-purpose flour
- ¼ cup grated Parmesan cheese
- 2 large eggs, beaten
- ¼ tsp garlic powder
- ¼ tsp dried oregano
- Salt & pepper to taste
- Olive oil spray

Prep the mixture
In a mixing bowl, combine chopped spinach, feta, flour, Parmesan, garlic powder, and oregano. Season lightly with salt and pepper (remember: feta is salty). -
Add the eggs
Pour in the beaten eggs and mix until everything is evenly coated and forms a scoopable batter. -
Shape the crisps
Line a baking sheet with parchment. Scoop tablespoon-sized portions and gently flatten into small discs. -
Spray & bake
Lightly mist the tops with olive oil spray.
Bake at 400°F (200°C) for 10–12 minutes, until golden and crisp around the edges. -
Cool slightly
Let them sit for 2–3 minutes so they firm up before serving.

- 1 tbsp finely chopped sun-dried tomatoes
- 1 tbsp chopped dill or fresh parsley
- 1–2 tbsp breadcrumbs for extra crunch
- A pinch of chili flakes for a kick
