For the Meatloaf
- 2 lbs ground chicken
- 1 cup grated Parmesan cheese
- ยฝ cup panko breadcrumbsย (or whole-wheat/GF crumbs)
- 2 large eggs
- 4 cloves garlic, minced
- 1 small onion, finely diced
- 2 tbsp fresh parsley, chopped
- 1 tsp Italian seasoning
- ยฝ tsp salt
- ยฝ tsp black pepper
For the Topping
- 2 tbsp unsalted butter, melted
- 2 cloves garlic, minced
- ยผ cup grated Parmesan
- 2 tbsp parsley, chopped (optional)
๐ฉโ๐ณ Instructions
- Preheat oven toย 375ยฐF (190ยฐC). Grease or line a loaf pan.
- In a large bowl, combine chicken, Parmesan, breadcrumbs, eggs, garlic, onion, parsley, and seasonings. Mix gently until just combined.
- Shape mixture into a loaf and place in pan.
- Mix melted butter, garlic, and Parmesan, then brush over the top.
- Bakeย 45โ55 minutes, until internal temp reachesย 165ยฐF.
- Rest 10 minutes before slicing. Garnish with parsley & extra Parmesan.
