๐ Ingredients:
- 1 lb (450g) ground beef (or ground turkey/chicken)
- 1 packet taco seasoning mix (or homemade)
- 1 cup salsa
- 1 can (15 oz) refried beans
- 1 can (15 oz) black beans, drained & rinsed (optional)
- 1 cup sour cream
- 2 cups shredded cheddar or Mexican blend cheese
- 6 small flour or corn tortillas (cut in half if needed to fit)
- 1 cup diced tomatoes
- 1 avocado, diced
- ยฝ cup sliced black olives
- 1โ2 fresh jalapeรฑos, sliced
- Fresh cilantro, chopped
- 2 green onions, chopped
- Cooking spray or a little oil

Cook the Beef Mixture
- In a skillet over medium heat, cook the ground beef until browned.
- Drain excess fat.
- Stir in taco seasoning + salsa + ยผ cup water. Simmer for 5 minutes.

Prepare the Dish
- Preheat oven toย 375ยฐF (190ยฐC).
- Spray a 9ร13-inch baking dish with cooking spray.

Layer the Casserole
- Spread a thin layer of beef mixture on the bottom.
- Add a layer of tortillas to cover.
- Spread with refried beans, then more beef mixture, then some shredded cheese.
- Repeat layers (tortilla โ beans โ beef โ cheese) until all ingredients are used, finishing with beef & cheese on top.

Bake
- Cover with foil and bake forย 20 minutes.
- Remove foil and bake anotherย 10 minutes, until cheese is melted and bubbly.

Add Toppings
- Remove from oven and let rest 5 minutes.
- Spread sour cream evenly on top.
- Garnish with diced tomatoes, avocado, olives, jalapeรฑos, green onions, and cilantro.

Serve & Enjoy
- Cut into squares and serve warm with tortilla chips, salsa, or guacamole on the side.
