Old-Fashioned Spaghetti with Hearty Meat Sauce

This recipe isnโ€™t meant to be โ€œauthenticโ€ Italian; itโ€™s a beloved American classic. The key is a long, slow simmer to develop deep, comforting flavors.


Ingredients:

For the Meat Sauce:

  • 1 smallย onion, finely diced
  • ยฝ cupย green bell pepper, finely diced

Instructions:

1. Build the Flavor Base:

  • Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.
  • Add the diced onion and green pepper. Sautรฉ for 5-6 minutes, until softened.
  • Add the ground beef, breaking it up with a spoon. Cook until no longer pink. Drain off most of the excess fat.

2. Create the Sauce:

4. Cook the Spaghetti:

  • Just before the sauce is finished, bring a large pot of generously salted water to a rolling boil.
  • Add the spaghetti and cook according to package directions untilย al denteย (firm to the bite).
  • Reserve about ยฝ cup of the starchy pasta water before draining.

5. Combine and Serve:

  • Remove the bay leaves from the sauce. Taste and adjust seasoning with salt and pepper.
  • Add the drained spaghetti directly to the pot of sauce. Use tongs to toss everything together, adding a splash of the reserved pasta water if needed to help the sauce cling to the noodles.
