Ingredients

- ยฝ cup shredded cheddar cheese (for topping)

Instructions

Cook the base
In a large skillet, melt the butter over medium heat.
Add the minced garlic and chopped jalapeรฑo. Sautรฉ for 30 seconds until fragrant. -
Make the creamy sauce
Add almond milk, heavy cream, cream cheese, green chilis (with juices), chili powder, cumin, and onion powder to the skillet.
Stir until smooth and the cream cheese has melted, then whisk in 1 cup shredded cheddar cheese until fully incorporated. -
Add the chicken
Stir in the shredded chicken and top with the remaining ยฝ cup shredded cheddar cheese.
Reduce the heat to low, cover the skillet, and let simmer for 10 minutes. -
Serve
Garnish with chopped green onions, extra jalapeรฑo slices, or sliced avocado, if desired.
