- Boneless, skinless chicken breasts
- All-purpose flour (or whole wheat for a healthier option)
- Extra virgin olive oil
- Garlic, finely chopped
- Tomato puree (or crushed tomatoes for a chunkier texture)
- Dried oregano
- Fresh basil leaves
- Salt & black pepper
- Mozzarella cheese (part-skim for lower points)
- Turmeric

How to Make WW Chicken Pizzaiola

Here’s an overview of the steps to make this simple Chicken Pizzaiola recipe:
Prepare the Chicken
- Slice chicken breasts horizontally to create thin cutlets and lightly pound for even cooking.
Coat & Sear the Chicken
- In a shallow dish, mix whole wheat flour, salt, black pepper, and ½ teaspoon of turmeric.
- Dredge chicken cutlets in the seasoned flour and pan-sear in 1 tablespoon of olive oil over medium heat until lightly golden. Remove and set aside.
Make the Pizzaiola Sauce
- In the same pan, sauté 3 cloves of minced garlic until fragrant.
- Stir in 1 teaspoon of turmeric, then add 1 cup tomato puree, 1 teaspoon dried oregano, ½ teaspoon dried basil, salt & pepper to taste.
- Simmer for 5-7 minutes until flavors meld and sauce thickens.
Simmer the Chicken
- Return chicken to the pan, coat well with sauce, and cover to simmer for 10 minutes. This helps the turmeric fully infuse into the dish!
Add Mozzarella & Melt
- Top each cutlet with ¼ cup shredded light mozzarella cheese.
- Cover and cook until cheese melts.
Serve & Enjoy!
- Garnish with fresh basil and serve hot.

Prepare the Chicken

Slice the chicken breasts horizontally to make 4-5 thin cutlets.

Lightly pound with a meat mallet to even thickness.
Coat & Sear the Chicken

Season flour with salt & pepper, then coat each cutlet lightly.

Heat 1 tbsp olive oil in a large skillet over medium heat.

Sear chicken for 2 minutes per side, just until golden brown.

Remove and cover with foil to keep warm.
Make the Pizzaiola Sauce

In the same skillet, reduce heat, add remaining olive oil & garlic.

Sauté for 30 seconds (don’t let it burn!).
