Ingredients

Cheesecake Filling

  • 8 ounces (225g) cream cheese, softened
  • 1¼ cups powdered sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 1 cup cold heavy whipping cream

Fruit

  • 1 pound fresh strawberries, hulled and cut into bite-sized pieces
  • 12 ounces fresh blueberries
  • 6 ounces fresh blackberries

Instructions

Step 1: Prepare the Equipment

For the fluffiest filling, place your mixing bowl and beaters in the refrigerator for about 1 hour before starting.

Wash the berries thoroughly and dry them completely with paper towels. Excess moisture can thin the cheesecake mixture.


Step 2: Make the Cheesecake Filling

In a large mixing bowl, beat the softened cream cheese until completely smooth.

Add the powdered sugar, vanilla extract, and salt. Continue beating until the mixture becomes creamy and lump-free.

With the mixer running on low speed, slowly pour in the cold heavy cream.

Increase the mixer to high speed and beat for 3–5 minutes until the mixture becomes thick, light, and fluffy with stiff peaks.


Step 3: Prepare the Fruit

Reserve:

  • ½ cup strawberries
  • ⅓ cup blueberries
  • ¼ cup blackberries

These will be used to decorate the top.

Gently fold the remaining berries into the cheesecake mixture using a rubber spatula. Mix carefully to avoid crushing the fruit.


Step 4: Assemble

Transfer the cheesecake salad to a serving bowl.

Arrange the reserved berries on top for a colorful finish.

Storage
