- A pinchย of cinnamon (optional)
- A small handfulย of dark chocolate chipsย > 90% cacaoย (optional, check label for no added sugar)
Instructions:
- Mash the Banana:ย In a small bowl, mash the banana with a fork until itโs mostly smooth.
- Mix Ingredients:ย Add the egg, milk, and vanilla extract (if using) to the mashed banana. Whisk together until well combined.
- Add Dry Ingredients:ย Stir in the oats, cinnamon, and chocolate chips (if using). Mix until everything is just combined.
- Pour into Mug:ย Lightly grease a large, microwave-safe mug (at least 12 oz / 350 ml) with a bit of oil or cooking spray. Pour the batter into the mug.
- Microwave:ย Cook on high forย 2 to 3 minutes. Start checking at 2 minutes. The cake is done when the top looks set and is dry to the touch. It will be very moist, which is perfect!
