Ingredients

  • 2 large potatoes (or sweet potatoes, peeled & cut into thin chips/wedges)
  • Low-calorie cooking spray
  • 1 tsp smoked paprika
  • 1 tsp garlic granules
  • Salt & black pepper
  • 80g reduced-fat cheddar or mozzarella (2 x Healthy Extra A)
  • 6 slices lean ham, chicken, or turkey bacon, chopped (Free)
  • 1 small onion, finely sliced
  • 1 handful mushrooms, sliced
  • 4 cherry tomatoes, halved
  • Fresh basil or oregano (optional)


Method

  1. Preheat oven to 200ยฐC (fan 180ยฐC).
  2. Cut potatoes into chips, spray with low-calorie spray, season with paprika, garlic, salt & pepper. Bake 25โ€“30 minutes until golden and crisp.
  3. Once cooked, scatter chips into an ovenproof dish.
  4. Top with onion, mushrooms, ham (or bacon), and tomatoes.
  5. Sprinkle with cheese, then return to oven for 5โ€“10 minutes until melted and bubbling.
  6. Finish with fresh basil or oregano before serving.

โœ… Can also be made with butternut squash or carrot fries for even lighter chips.
