Ingredients (Serves 4)

  • 400g fresh mushrooms (button or baby bella work best) โ€“ Speed
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ยฝ tsp black pepper
  • ยฝ tsp salt
  • 40g wholemeal breadcrumbs (use as your Healthy Extra B)
  • 2 tbsp cornmeal or polenta (โ‰ˆ3 Syns for whole recipe, optional for crunch)
  • 1 large egg, beaten
  • Low-calorie cooking spray

(Optional: add dried parsley, chili flakes, or mixed herbs for extra flavor)


Instructions

  1. Prep Mushrooms:
    Clean mushrooms and pat dry. If large, slice in half.
  2. Coating Mix:
    In a bowl, combine breadcrumbs, cornmeal (if using), garlic powder, onion powder, paprika, salt, and pepper.
  3. Dip & Coat:
    Dip mushrooms into beaten egg, then roll in breadcrumb mix until coated.
  4. Bake or Air Fry (instead of frying):
    • Oven: Place mushrooms on a lined tray, spray well with Frylight. Bake at 200ยฐC (400ยฐF) for 20โ€“25 minutes, turning halfway.
    • Air fryer (best crunch): 200ยฐC for 12โ€“15 minutes, shaking halfway, until golden and crispy.
  5. Serve:
    Enjoy hot with a Syn-free dip like fat-free Greek yogurt mixed with garlic, lemon, and herbs.
