Ingredients:

* 1 1/2 to 2 lbs pork tenderloin

* 2 cups pineapple chunks (fresh or canned, with juice)

* 1/2 cup pineapple juice (use from the can if needed)

* 1/3 cup brown sugar

* 1/4 cup soy sauce

* 2 tablespoons honey

* 2 cloves garlic, minced

* 1 teaspoon ground ginger

* 1/2 teaspoon black pepper

* 1/2 teaspoon salt

* 1 tablespoon cornstarch

* 2 tablespoons water

* 2 tablespoons chopped fresh parsley or cilantro (optional, for garnish)

Instructions:

1. Place the pork tenderloin in the bottom of the slow cooker.

2. Scatter the pineapple chunks evenly around and over the pork.

3. In a bowl, whisk together pineapple juice, brown sugar, soy sauce, honey, garlic, ginger, salt, and black pepper.

4. Pour the sauce mixture over the pork and pineapple.

5. Cover and cook on low for 4 hours or until pork is tender and cooked through.

6. Remove the pork and slice into thick pieces.

7. In a small bowl, mix cornstarch and water, then stir into the sauce in the slow cooker.

8. Cover and cook on high for 10–15 minutes until the sauce thickens slightly.

9. Spoon the pineapple sauce over the sliced pork and garnish with parsley or cilantro if desired.
