Ingredients

For the Meatballs

  • 1 lb (450g) ground lamb or beef
  • ยผ small onion, finely grated
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 egg
  • ยผ cup breadcrumbs
  • 1 tsp salt
  • ยฝ tsp black pepper
  • 1 tsp dried oregano
  • 1 tbsp olive oil

For the Tzatziki

  • 1 cup Greek yogurt
  • ยฝ cucumber, grated and squeezed dry
  • 1 garlic clove, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • Pinch of salt

For the Bowl

  • 3 cups cooked basmati rice
  • 1 small cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • ยฝ red onion, thinly sliced
  • 1 lemon, cut into wedges
  • 2 tbsp fresh parsley, chopped

Instructions

1. Make the Tzatziki

In a bowl, combine the Greek yogurt, grated cucumber, garlic, lemon juice, dill, and salt.

Mix well and refrigerate while preparing the remaining ingredients.

2. Prepare the Meatballs

In a large mixing bowl, combine the ground meat, grated onion, garlic, parsley, dill, egg, breadcrumbs, oregano, salt, and black pepper.
