Ingredients
- 2 medium zucchini
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- 6 oz (170 g) feta cheese
- ⅓ cup Greek yogurt
- 1 tbsp lemon juice
- 1 small garlic clove
- 1 tbsp fresh dill or parsley, chopped
- 1 tbsp honey, optional
- Pinch of red pepper flakes, optional
- Fresh herbs for garnish
Instructions
- Prepare zucchini: Slice zucchini lengthwise into thin strips, about ¼-inch thick. Pat dry with paper towels.
- Season: Lightly brush the slices with olive oil and season with salt, pepper, and garlic powder.
- Cook: Heat a grill pan or skillet over medium-high heat. Cook zucchini for about 2–3 minutes per side, until tender with lightly browned edges. Set aside to cool slightly.
- Make whipped feta: Add feta, Greek yogurt, lemon juice, and garlic to a food processor. Blend for 1–2 minutes until creamy and smooth. Stir in the chopped herbs.
- Build the stacks: Place one zucchini slice on a serving plate and spread with a spoonful of whipped feta. Add another zucchini slice and repeat, creating 3–4 layers.
- Finish: Top with extra whipped feta, fresh herbs, black pepper, and red pepper flakes. For a sweet-savory finish, drizzle lightly with honey.
