Total Time: 25 minutes
Servings: 4

Ingredients

  • 2 medium zucchini
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • 6 oz (170 g) feta cheese
  • ⅓ cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 small garlic clove
  • 1 tbsp fresh dill or parsley, chopped
  • 1 tbsp honey, optional
  • Pinch of red pepper flakes, optional
  • Fresh herbs for garnish

Instructions

  1. Prepare zucchini: Slice zucchini lengthwise into thin strips, about ¼-inch thick. Pat dry with paper towels.
  2. Season: Lightly brush the slices with olive oil and season with salt, pepper, and garlic powder.
  3. Cook: Heat a grill pan or skillet over medium-high heat. Cook zucchini for about 2–3 minutes per side, until tender with lightly browned edges. Set aside to cool slightly.
  4. Make whipped feta: Add feta, Greek yogurt, lemon juice, and garlic to a food processor. Blend for 1–2 minutes until creamy and smooth. Stir in the chopped herbs.
  5. Build the stacks: Place one zucchini slice on a serving plate and spread with a spoonful of whipped feta. Add another zucchini slice and repeat, creating 3–4 layers.
  6. Finish: Top with extra whipped feta, fresh herbs, black pepper, and red pepper flakes. For a sweet-savory finish, drizzle lightly with honey.

Serving Tip: Serve chilled or at room temperature as a healthy appetizer, light lunch, or Mediterranean-style side dish.
