Fluffy Chocolate Nougat Candy
Ingredients:
2 cups Sugar (400g)
1/2 cup Water (120ml)
3 Egg whites
4 oz Semi-sweet chocolate, melted (115g)
12 oz Milk chocolate chips (340g)
Directions:
1. In a medium saucepan, combine sugar and water. Boil without stirring until the mixture reaches 260°F (127°C) on a candy thermometer.
2. While the syrup boils, beat the egg whites in a stand mixer until stiff peaks form.
3. With the mixer running, slowly stream the hot sugar syrup into the egg whites. Continue beating until the mixture is thick, glossy, and marshmallow-like.
4. Gently fold the melted semi-sweet chocolate into the egg white mixture until combined.
5. Spread the nougat into a parchment-lined 8×8 inch (20×20 cm) pan. Let it sit at room temperature until firm, about 3 hours.
6. Remove the nougat from the pan and slice into bars.
7. Melt the milk chocolate in a microwave-safe bowl in 30-second intervals until smooth.
8. Dip each nougat bar into the milk chocolate to coat completely. Place on parchment paper to set.
