Ingredients:
- 1 cup almond flour (or oat flour for a lighter texture)
- 2 tbsp coconut flour
- 1 tsp baking powder
- 1/4 tsp salt
- 3 large eggs
- 1/4 cup unsweetened Greek yogurt
- 2 tbsp sugar-free sweetener (like erythritol or stevia)
Optional Add-ins:
- 1 tsp vanilla extract
- 1/4 cup sugar-free chocolate chips or berries
Instructions:
- Preheat your oven to 350°F (175°C) and lightly grease a small loaf pan.
- In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt.
- In another bowl, whisk together eggs, Greek yogurt, sweetener, and vanilla.
- Gradually mix the wet ingredients into the dry ingredients until smooth. Fold in chocolate chips or berries if using.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool slightly, then slice and enjoy a guilt-free, low-calorie treat!
