Ingredients:

  • 1 cup almond flour (or oat flour for a lighter texture)
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup unsweetened Greek yogurt
  • 2 tbsp sugar-free sweetener (like erythritol or stevia)

Optional Add-ins:

  • 1 tsp vanilla extract
  • 1/4 cup sugar-free chocolate chips or berries

Instructions:

  1. Preheat your oven to 350°F (175°C) and lightly grease a small loaf pan.
  2. In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt.
  3. In another bowl, whisk together eggs, Greek yogurt, sweetener, and vanilla.
  4. Gradually mix the wet ingredients into the dry ingredients until smooth. Fold in chocolate chips or berries if using.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
