  • ½ cup grated Parmesan cheese
  • 1 cup panko breadcrumbs (or regular breadcrumbs)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 eggs, beaten (or ½ cup milk for a lighter coating)
  • Cooking spray (optional)

Optional Garnishes

  • Fresh chopped parsley
  • Lemon wedges
  • Extra grated Parmesan
  • Red pepper flakes

Instructions

1. Prepare the Oven

  • Preheat your oven to 425°F (220°C).
  • Line a large baking sheet with parchment paper or lightly grease it.

2. Prepare the Coating

In one bowl, beat the eggs.

In another bowl, combine:

  • Onion powder
  • Smoked paprika
  • Oregano
  • Parsley
  • Salt
  • Black pepper

3. Coat the Cauliflower

  • Toss the cauliflower florets with olive oil.
  • Dip each floret into the beaten eggs.
  • Coat thoroughly in the breadcrumb mixture, pressing gently so the coating sticks.

4. Bake

  • Arrange the florets in a single layer on the prepared baking sheet.
  • Lightly spray with cooking spray for extra crispiness (optional).
  • Bake for 30–35 minutes, turning halfway through, until golden brown and crispy.

5. Serve

Sprinkle with fresh parsley and extra Parmesan, then serve immediately with lemon wedges.

Delicious Dipping Sauces

  • Garlic aioli
  • Ranch dressing
  • Spicy sriracha mayo
  • Honey mustard
  • Marinara sauce
  • Greek yogurt herb dip

Storage & Reheating

Refrigerator: Store leftovers in an airtight container for up to 3 days.

Reheat: Bake at 375°F (190°C) for 8–10 minutes or air-fry for 4–5 minutes to restore crispiness.

Freezer: Freeze after baking for up to 2 months. Reheat directly from frozen in the oven until hot and crisp.

Tips for Extra Crispiness

  • Dry the cauliflower thoroughly before coating.
  • Don’t overcrowd the baking sheet.
  • Use panko breadcrumbs for the crunchiest texture.
  • Finish under the broiler for 1–2 minutes for an extra crispy, golden crust.
