- 4 large boneless, skinless chicken breasts – 0 points
- 1 cup broccoli florets, finely chopped (steamed or lightly blanched) – 0 points
- ½ cup fat-free plain Greek yogurt (instead of cream cheese) – 0 points
- ½ cup reduced-fat shredded mozzarella – 6 points
- ¼ cup grated Parmesan cheese – 3 points
- 2 cloves garlic, minced – 0 points
- ½ tsp onion powder – 0 points
- ½ tsp paprika – 0 points
- Salt & black pepper to taste – 0 points
- Olive oil spray – 1 point
Instructions
- Preheat oven to 200°C / 400°F. Lightly coat a baking dish with olive oil spray.
- Slice each chicken breast lengthwise to form a pocket (don’t cut all the way through).
- In a bowl, mix broccoli, Greek yogurt, mozzarella, Parmesan, garlic, onion powder, and paprika.
- Stuff the mixture evenly inside each chicken breast. Secure with toothpicks if needed.
- Season chicken with salt & pepper, then lightly spray with olive oil.
- Bake for 25–30 minutes until chicken is fully cooked and cheese is melty.
