Spinach Garlic Meatballs Stuffed with Mozzarella

Ingredients (makes about 24 meatballs / 6 servings):

  • 225 g fresh baby spinach (steamed & finely chopped) – 0 points
  • 2 cloves garlic, finely chopped – 0 points
  • 1 tsp olive oil (instead of 15–30 ml) – 1 point
  • 450 g extra lean ground beef (5% fat) – 12 points
  • 450 g lean ground turkey or chicken (instead of pork) – 9 points
  • 100 g whole wheat breadcrumbs – 10 points
  • 2 large eggs – 0 points (WW ZeroPoint food on most plans)
  • 30 ml skim milk – 0 points
  • 1 tsp Italian seasoning – 0 points
  • Salt & pepper to taste – 0 points
  • 120 g light mozzarella cheese (cut into 24 small cubes) – 12 points

Instructions:

  1. Heat 1 tsp olive oil in a pan, sauté spinach and garlic until wilted. Let cool, then chop finely.
  2. In a large bowl, mix ground beef, ground turkey, breadcrumbs, eggs, milk, seasoning, salt & pepper. Stir in spinach mixture.
  3. Shape into 24 small meatballs. Press a cube of mozzarella into the center of each and seal.
  4. Place on a lined baking tray. Bake at 200°C / 400°F for 18–20 minutes until cooked through and golden.
  5. Optional: Serve with a simple zero-point marinara sauce or over zucchini noodles/spaghetti squash for a slimming-friendly meal.
