- 225 g fresh baby spinach (steamed & finely chopped) – 0 points
- 2 cloves garlic, finely chopped – 0 points
- 1 tsp olive oil (instead of 15–30 ml) – 1 point
- 450 g extra lean ground beef (5% fat) – 12 points
- 450 g lean ground turkey or chicken (instead of pork) – 9 points
- 100 g whole wheat breadcrumbs – 10 points
- 2 large eggs – 0 points (WW ZeroPoint food on most plans)
- 30 ml skim milk – 0 points
- 1 tsp Italian seasoning – 0 points
- Salt & pepper to taste – 0 points
- 120 g light mozzarella cheese (cut into 24 small cubes) – 12 points
Instructions:
- Heat 1 tsp olive oil in a pan, sauté spinach and garlic until wilted. Let cool, then chop finely.
- In a large bowl, mix ground beef, ground turkey, breadcrumbs, eggs, milk, seasoning, salt & pepper. Stir in spinach mixture.
- Shape into 24 small meatballs. Press a cube of mozzarella into the center of each and seal.
- Place on a lined baking tray. Bake at 200°C / 400°F for 18–20 minutes until cooked through and golden.
- Optional: Serve with a simple zero-point marinara sauce or over zucchini noodles/spaghetti squash for a slimming-friendly meal.
