Ingredients

  • 2 lbs chicken breast or thighs, cooked, seasoned, and cut into small cubes (use spicy seasoning if desired)
  • 12 slices bacon, cooked and chopped
  • 2 cups broccoli florets
  • 1 cup cauliflower florets
  • 2 cups shredded cheese (Mexican blend or cheddar works best)
  • 1½ tsp garlic, minced
  • ¾ cup ranch dressing
  • Salt and pepper, to taste

Instructions

1. Preheat the Oven

  • Set oven to 350°F (175°C).

2. Cook the Vegetables

  • Steam broccoli and cauliflower until just tender.
  • Strain and immediately run under cold water to stop further cooking. Set aside.

3. Mix the Casserole Base

  • In a large bowl, combine:
    • cooked chicken
    • half the bacon
    • steamed broccoli & cauliflower
    • minced garlic
    • half of the shredded cheese
  • Pour in the ranch dressing and mix until fully coated.

4. Assemble and Bake

  • Transfer the mixture into a greased large baking dish.
  • Sprinkle with the remaining cheese and bacon.
  • Bake uncovered for 15 minutes, or until cheese is bubbly and melted.
