Ingredients
- 2 lbs chicken breast or thighs, cooked, seasoned, and cut into small cubes (use spicy seasoning if desired)
- 12 slices bacon, cooked and chopped
- 2 cups broccoli florets
- 1 cup cauliflower florets
- 2 cups shredded cheese (Mexican blend or cheddar works best)
- 1½ tsp garlic, minced
- ¾ cup ranch dressing
- Salt and pepper, to taste
Instructions
1. Preheat the Oven
- Set oven to 350°F (175°C).
2. Cook the Vegetables
- Steam broccoli and cauliflower until just tender.
- Strain and immediately run under cold water to stop further cooking. Set aside.
3. Mix the Casserole Base
- In a large bowl, combine:
- cooked chicken
- half the bacon
- steamed broccoli & cauliflower
- minced garlic
- half of the shredded cheese
- Pour in the ranch dressing and mix until fully coated.
4. Assemble and Bake
- Transfer the mixture into a greased large baking dish.
- Sprinkle with the remaining cheese and bacon.
- Bake uncovered for 15 minutes, or until cheese is bubbly and melted.
