🧺 Ingredients
- 500 g (1 lb) boneless chicken breast, cut into bite-size pieces
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 cup diced tomatoes (fresh or canned, drained)
- 1 teaspoon paprika
- ½ teaspoon chili powder (optional)
- Salt & black pepper, to taste
- 1½ cups shredded cheddar or Mexican-blend cheese
- Fresh parsley or cilantro, chopped (for garnish)

Cook the chicken
Heat olive oil in a large skillet over medium heat.
Add chicken, season with salt, pepper, paprika, and chili powder. Cook until lightly golden and cooked through. -
Add aromatics
Stir in onion and garlic. Cook for 2–3 minutes until fragrant. -
Add vegetables
Add bell peppers and tomatoes. Cook for 5–7 minutes until peppers are tender and everything is well combined. -
Add cheese
Lower heat and sprinkle cheese evenly over the skillet.
Cover and let melt for 2–3 minutes until gooey and bubbly. -
Garnish & serve
Finish with fresh parsley or cilantro and serve hot.
