🧀 Cheesy Chicken & Pepper Skillet

Tender chicken cooked with colorful bell peppers and tomatoes, then smothered in melted cheese for an irresistible one-pan meal.


🧺 Ingredients

  • 500 g (1 lb) boneless chicken breast, cut into bite-size pieces
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 cup diced tomatoes (fresh or canned, drained)
  • 1 teaspoon paprika
  • ½ teaspoon chili powder (optional)
  • Salt & black pepper, to taste
  • 1½ cups shredded cheddar or Mexican-blend cheese
  • Fresh parsley or cilantro, chopped (for garnish)

👩‍🍳 Instructions

  1. Cook the chicken
    Heat olive oil in a large skillet over medium heat.
    Add chicken, season with salt, pepper, paprika, and chili powder. Cook until lightly golden and cooked through.
  2. Add aromatics
    Stir in onion and garlic. Cook for 2–3 minutes until fragrant.
  3. Add vegetables
    Add bell peppers and tomatoes. Cook for 5–7 minutes until peppers are tender and everything is well combined.
  4. Add cheese
    Lower heat and sprinkle cheese evenly over the skillet.
    Cover and let melt for 2–3 minutes until gooey and bubbly.
  5. Garnish & serve
    Finish with fresh parsley or cilantro and serve hot.
