This rich, juicy stuffed chicken is packed with buttery garlic mushrooms and melty cheese. It looks fancy, but it’s surprisingly easy to make and perfect for family dinners.

Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, finely chopped
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 cup shredded mozzarella or provolone cheese
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp Italian seasoning
- 2 tbsp fresh parsley, chopped
- 1 tbsp olive oil
Instructions
Step 1: Prep the Chicken
Preheat oven to 200°C (400°F).
Using a sharp knife, carefully cut a pocket into the side of each chicken breast without cutting all the way through.
Season both sides with:
- salt
- pepper
- Italian seasoning
Step 2: Cook the Mushroom Filling
Heat butter in a skillet over medium heat.
Add chopped mushrooms and cook for 5–6 minutes until browned and softened.
Stir in minced garlic and cook for another 30 seconds until fragrant.
Remove from heat and mix in:
- shredded cheese
- chopped parsley
Step 3: Stuff the Chicken
Fill each chicken breast with the mushroom-cheese mixture.
Secure with toothpicks if needed so the filling stays inside.
Step 4: Sear
Heat olive oil in a large oven-safe skillet over medium-high heat.
Sear chicken for about 3–4 minutes per side until golden brown.
Step 5: Bake
Transfer skillet to the oven and bake for 15–20 minutes, or until the chicken reaches 75°C (165°F) internally.
Step 6: Serve
Let the chicken rest for 5 minutes before serving.
Spoon the buttery garlic juices from the pan over the top and garnish with extra parsley.
