Prep Time: 15 minutes

Chill Time: 1–2 hours

Total Time: 1 hour 15 minutes

Servings: 16 bars

Ingredients

For the Rice Krispie Layer

  • 6 cups Rice Krispies cereal
  • 1 cup creamy peanut butter
  • ½ cup honey or light corn syrup
  • ¼ cup unsalted butter
  • 1 tsp vanilla extract
  • Pinch of salt (optional)

For the Chocolate Topping

  • 1½ cups semi-sweet chocolate chips
  • 1 tbsp coconut oil or unsalted butter

Instructions

1. Prepare the Pan

Line an 8×8-inch (20×20 cm) baking pan with parchment paper or lightly grease it for easy removal.

2. Make the Peanut Butter Mixture

In a medium saucepan over low heat, combine the butter, peanut butter, and honey.

Stir continuously until the mixture is smooth and fully melted.

Remove from the heat and stir in the vanilla extract and salt, if using.

3. Coat the Cereal

Place the Rice Krispies cereal in a large mixing bowl.

Pour the warm peanut butter mixture over the cereal and gently fold until every piece is evenly coated.

4. Press into the Pan

Transfer the mixture to the prepared pan.

Using a spatula or lightly greased hands, gently press it into an even layer without packing it too firmly to keep the bars light and crispy.

5. Prepare the Chocolate Topping

Place the chocolate chips and coconut oil in a microwave-safe bowl.

Heat in 30-second intervals, stirring between each, until completely melted and smooth. Alternatively, melt them together over a double boiler.

6. Finish the Bars

Pour the melted chocolate over the cereal layer and spread evenly with an offset spatula or the back of a spoon.

7. Chill

Refrigerate for 1–2 hours, or until the chocolate is completely set and the bars are firm.

8. Slice and Serve

Lift the bars from the pan using the parchment paper and cut into squares.

Serve chilled or at room temperature.

Tips for Perfect Rice Krispie Bars

  • Store in an airtight container for up to 5 days at room temperature or 1 week in the refrigerator.
  • For a richer dessert, substitute milk chocolate for the semi-sweet chocolate chips.
  • Add chopped peanuts or mini chocolate chips for extra crunch and texture.
