Prep Time: 25 minutes
Chill Time: 4 hours (or overnight)
Servings: 8–10

Ingredients

200g 70% dark chocolate, finely chopped
900ml thickened cream
120g (2/3 cup) pure icing sugar
Pinch sea salt flakes
2 tbsp instant coffee granules
400ml hot water
80ml (1/3 cup) Kahlúa (or Frangelico)
200g thin savoiardi biscuits (about 28 biscuits)
250g mascarpone, at room temperature
Cocoa powder, to dust

Instructions

Step 1 — Make the Chocolate Ganache
Place chopped dark chocolate in a heatproof bowl. Heat 150ml of the cream in a saucepan over medium heat until hot but not boiling. Pour the hot cream over the chocolate and let sit for 5 minutes. Stir gently until smooth and glossy. Allow to cool completely.

Step 2 — Make the Chocolate Cream
Add half of the icing sugar and 450ml cream to the cooled ganache. Add a pinch of sea salt. Using electric beaters, whip until thick and fluffy. Be careful not to overbeat. Set aside.

Step 3 — Prepare the Coffee Mixture
In a bowl, dissolve instant coffee in 400ml hot water. Stir in Kahlúa or Frangelico. Allow to cool slightly.

Step 4 — Make the Mascarpone Cream
In another bowl, beat mascarpone with remaining icing sugar and 300ml cream until smooth, light, and fluffy.

Step 5 — Assemble the Tiramisu
Quickly dip each savoiardi biscuit into the coffee mixture. Arrange in a single layer in your serving dish. Spread half of the chocolate cream over biscuits. Add another layer of dipped biscuits. Spread mascarpone cream evenly. Finish with remaining chocolate cream on top.

Step 6 — Chill
Cover and refrigerate for at least 4 hours, preferably overnight, to allow flavors to develop.

Step 7 — Serve
Dust generously with cocoa powder before serving. Slice and enjoy chilled.
