Ingredients
For the Pudding Base
- 1 cup fresh orange juice (strained)
- 1 cup heavy cream or whipping cream
- ½ cup milk
- ⅓ cup sugar
- 1½ tsp gelatin powder or agar-agar powder
- 2 tbsp cold water
- ½ tsp orange zest
For Topping & Garnish
- ¼ cup whipped cream
- Small orange slices
- Rosemary sprigs (optional)
Instructions
Bloom the Gelatin
In a small bowl, sprinkle gelatin over cold water and let it sit for 5–10 minutes until bloomed.
Prepare the Cream Base
In a saucepan, combine milk, heavy cream, and sugar. Heat gently on low flame until the sugar dissolves completely. Do not boil.
Remove from heat and stir in the bloomed gelatin and orange zest until fully dissolved.
Add Orange Juice
Pour in the fresh orange juice and whisk well.
Strain the mixture through a fine sieve for a silky smooth texture.
Set the Pudding
Lightly grease pudding molds with a little oil. Pour the mixture evenly into the molds.
Refrigerate for at least 4–5 hours or overnight until perfectly set and jiggly.
Demold the Pudding
Dip the bottom of each mold into warm water for 3–5 seconds. Place a plate on top and gently flip to release the pudding.
Decorate & Serve
Top with a swirl of whipped cream, a small orange slice, and a touch of orange zest for that elegant café-style finish 🍊✨
