A creamy, comforting breakfast made with simple ingredients, creamy Greek yogurt, and plenty of juicy berries. It’s naturally sweet, satisfying, and easy to prepare ahead of time.

🥣 Ingredients

  • ½ cup cooked white or brown rice
  • ½ cup low-fat milk
  • ½ cup plain Greek yogurt
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 1–2 teaspoons honey, maple syrup, or your preferred sweetener
  • ½ cup mixed berries — strawberries, blueberries, raspberries, or blackberries
  • 1 tablespoon chia seeds, optional
  • Pinch of salt

👩‍🍳 Instructions

  1. Combine the rice and milk:
Place the cooked rice, milk, cinnamon, vanilla, and a pinch of salt in a small saucepan.
  2. Cook until creamy:
Heat over low to medium-low heat for about 5–7 minutes, stirring frequently. The rice should become soft and creamy, and most of the milk should be absorbed.
  3. Add the yogurt:
Remove the saucepan from the heat and allow it to cool for 2–3 minutes. Stir in the Greek yogurt until smooth and creamy.
  4. Sweeten:
Add honey, maple syrup, or your preferred sweetener to taste.
  5. Add the berries:
Spoon the rice pudding into a serving bowl and top generously with mixed berries.
  6. Finish and serve:
Sprinkle with chia seeds and a little extra cinnamon if desired. Enjoy warm, or refrigerate for 1–2 hours for a chilled version.

💡 Recipe Notes

  • For a higher-protein breakfast, use high-protein Greek yogurt.
  • For a naturally sweeter pudding, mash a few berries into the warm rice before adding the yogurt.
  • You can prepare it the night before and refrigerate it for an easy breakfast.
  • If the pudding becomes too thick after chilling, stir in a splash of milk before serving.
