🥣 Ingredients
- ½ cup cooked white or brown rice
- ½ cup low-fat milk
- ½ cup plain Greek yogurt
- ½ teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- 1–2 teaspoons honey, maple syrup, or your preferred sweetener
- ½ cup mixed berries — strawberries, blueberries, raspberries, or blackberries
- 1 tablespoon chia seeds, optional
- Pinch of salt

Combine the rice and milk:
Place the cooked rice, milk, cinnamon, vanilla, and a pinch of salt in a small saucepan. -
Cook until creamy:
Heat over low to medium-low heat for about 5–7 minutes, stirring frequently. The rice should become soft and creamy, and most of the milk should be absorbed. -
Add the yogurt:
Remove the saucepan from the heat and allow it to cool for 2–3 minutes. Stir in the Greek yogurt until smooth and creamy. -
Sweeten:
Add honey, maple syrup, or your preferred sweetener to taste. -
Add the berries:
Spoon the rice pudding into a serving bowl and top generously with mixed berries. -
Finish and serve:
Sprinkle with chia seeds and a little extra cinnamon if desired. Enjoy warm, or refrigerate for 1–2 hours for a chilled version.

- For a higher-protein breakfast, use high-protein Greek yogurt.
- For a naturally sweeter pudding, mash a few berries into the warm rice before adding the yogurt.
- You can prepare it the night before and refrigerate it for an easy breakfast.
