Ingredients

  • 2 cups broccoli florets, finely chopped
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup breadcrumbs or panko
  • 2 eggs

  • ½ tsp salt

  • 2 tbsp fresh parsley or dill, chopped

  • ½ cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp lemon juice

Instructions

  1. Prepare the broccoli
    Steam or microwave the broccoli for 2–3 minutes until slightly tender. Let cool, then finely chop.
  2. Mix the filling
    In a large bowl, combine broccoli, mozzarella, Parmesan, breadcrumbs, eggs, garlic, onion powder, salt, pepper, and herbs.
  3. Form the bites
    Scoop about 1 tablespoon of mixture and roll into balls. For extra cheesy centers, press a small cheese cube into the middle before sealing.
  4. Coat and arrange
    Roll lightly in extra breadcrumbs if desired. Place on a parchment-lined baking sheet or air fryer basket.
  5. Cook
    • Air Fryer: 375°F (190°C) for 10–12 minutes
    • Oven: 400°F (200°C) for 18–20 minutes
    Cook until golden brown and crispy.
  6. Make the sauce
    Stir together mayonnaise, Dijon mustard, honey, and lemon juice until smooth.
