Ingredients
- 2 cups cooked shredded chicken breast
- 1/2 cup plain Greek yogurt
- 1/4 cup light mayonnaise
- Salt and black pepper, to taste
- 1 celery stalk, diced
- 2 tbsp red onion, finely chopped
- 1 tsp Dijon mustard (optional)
- 1 tbsp lemon juice
- 1 tbsp fresh parsley or dill, chopped
Optional Add-Ins
- Grapes or dried cranberries
- Chopped pecans or almonds
- Diced apple
- Sliced cucumber
- Lettuce or spinach
Instructions
- In a large bowl, combine the Greek yogurt, light mayo, lemon juice, Dijon mustard, salt, and pepper.
- Add the shredded chicken, celery, red onion, and herbs.
- Mix until everything is evenly coated.
- Divide evenly into 4 meal prep containers.
- Store in the refrigerator for up to 4 days.
Serving Ideas
- Eat with crackers or toast
- Wrap in lettuce leaves
- Stuff into pita bread
- Serve over a salad
- Make a sandwich or croissant filling
