Ingredients

  • 2 medium zucchini, grated
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 tablespoon chopped fresh parsley (optional)
  • 1 tablespoon olive oil or avocado oil (for frying)

Instructions

  1. Grate the zucchini and place it in a colander. Sprinkle with a little salt and let it sit for 10 minutes.
  2. Wrap the zucchini in a clean kitchen towel and squeeze out as much liquid as possible.
  3. In a large bowl, combine the zucchini, eggs, mozzarella, Parmesan, garlic, Italian seasoning, onion powder, parsley, salt, and pepper.
  4. Heat the oil in a large nonstick skillet over medium heat.
  5. Scoop about 2 tablespoons of the mixture for each fritter and flatten slightly.
  6. Cook for 3–4 minutes per side, or until golden brown and crispy.
  7. Transfer to a paper towel-lined plate and serve warm.

Oven Method

  • Preheat oven to 425°F (220°C).
  • Line a baking sheet with parchment paper and lightly spray with cooking spray.
  • Form the mixture into small patties.
  • Bake for 20–25 minutes, flipping halfway through, until golden and crisp.
