Ingredients
- 2 medium zucchini, grated
- 2 large eggs
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon onion powder
- Salt and black pepper, to taste
- 1 tablespoon chopped fresh parsley (optional)
- 1 tablespoon olive oil or avocado oil (for frying)
Instructions
- Grate the zucchini and place it in a colander. Sprinkle with a little salt and let it sit for 10 minutes.
- Wrap the zucchini in a clean kitchen towel and squeeze out as much liquid as possible.
- In a large bowl, combine the zucchini, eggs, mozzarella, Parmesan, garlic, Italian seasoning, onion powder, parsley, salt, and pepper.
- Heat the oil in a large nonstick skillet over medium heat.
- Scoop about 2 tablespoons of the mixture for each fritter and flatten slightly.
- Cook for 3–4 minutes per side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate and serve warm.
Oven Method
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment paper and lightly spray with cooking spray.
- Form the mixture into small patties.
- Bake for 20–25 minutes, flipping halfway through, until golden and crisp.
