Ingredients
- 2 large cucumbers, peeled and chopped
- 1 lemon, juiced
- 8–10 fresh mint leaves
- 1-inch piece fresh ginger, peeled
- 3–4 cups cold water
- 1–2 tablespoons honey (optional)
- Ice cubes
- Lemon and cucumber slices, for garnish
Instructions
- Wash and chop the cucumbers into chunks.
- Add the cucumber, ginger, mint leaves, lemon juice, and 1 cup of water to a blender.
- Blend until smooth.
- Strain the mixture through a fine-mesh sieve if you prefer a smoother drink (optional).
- Pour into a pitcher and stir in the remaining cold water.
- Sweeten with honey if desired.
- Refrigerate for at least 30 minutes to allow the flavors to blend.
- Serve over ice and garnish with fresh cucumber slices, lemon slices, and mint leaves.
