How to Make Our Crispy Fried Chicken Feast

Step 1: Marinate the Chicken

  1. Place the chicken pieces in a large bowl.
  2. Add buttermilk, eggs, hot sauce, salt, black pepper, garlic powder, and smoked paprika. Mix until fully coated.
  3. Cover and refrigerate for at least 4 hours or overnight for maximum flavor and tenderness.

Step 2: Prepare the Crispy Coating

  1. Combine flour, cornflour, salt, garlic powder, onion powder, paprika, black and white pepper, thyme, oregano, cayenne, and baking powder in a large shallow dish.

Step 3: Coat the Chicken

  1. Remove chicken from marinade, letting excess drip off.
  2. Press into flour mixture, dip briefly back into the marinade, and coat again with flour. Press firmly to create extra-craggy edges.
  3. Place coated chicken on a tray and rest for 15 minutes to help breading adhere.

Step 4: Fry the Chicken

  1. Fill a deep, heavy pan halfway with oil and heat to 175°C / 350°F.
  2. Fry chicken in small batches, avoiding overcrowding.
  3. Cook drumsticks and wings for 10–12 minutes, larger pieces for 14–18 minutes. Maintain oil temperature between 165–175°C.
  4. Transfer to a wire rack rather than paper to keep the coating crisp. Sprinkle lightly with salt immediately.

Four Flavor Variations

1. Classic Southern Chicken

Serve freshly fried chicken as-is with mashed potatoes, gravy, coleslaw, and warm biscuits.

2. Extra-Crispy Homestyle Chicken

Double-coat the chicken before frying. Serve with coleslaw, pickles, biscuits, and hot sauce for a crunchy indulgence.

3. Nashville Hot Chicken

  1. Whisk melted butter, hot frying oil, cayenne, brown sugar, paprika, garlic powder, chili powder, and salt.
  2. Brush generously over fried chicken. Serve with pickles, fries, and ranch dressing.

4. Sticky Garlic-Herb Chicken

  1. Melt butter in a pan and sauté garlic for 30 seconds.
  2. Stir in honey, hot sauce, soy sauce, and lemon juice. Simmer 2 minutes.
  3. Toss fried chicken in the glaze and finish with parsley and Parmesan.

Storage & Serving Suggestions

  • Keep warm: Place cooked chicken on a wire rack in a 120°C / 250°F oven while frying remaining batches. Do not cover, to prevent sogginess.
  • Leftovers: Store in airtight containers in the fridge for up to 2 days. Reheat in the oven to maintain crispiness.
  • Serving Ideas: Pair with mashed potatoes, fries, coleslaw, or biscuits for a complete comfort food meal.
