A bold, creamy, crunchy pasta salad loaded with taco-seasoned beef, cheese, veggies, and crushed Doritos Locos Tacos flavor. Perfect for potlucks, game nights, or an easy dinner!
Ingredients
- 12 oz rotini pasta
- 1 lb ground beef
- 1 packet taco seasoning
- ⅓ cup water
- 2 cups lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- ½ cup red onion, diced
- 1 cup corn (drained if canned)
- 1 cup black beans, rinsed and drained
- 2 cups crushed Nacho Cheese Doritos
- Optional: sliced jalapeños, avocado, black olives
Dressing
- 1 cup sour cream
- ½ cup mayonnaise
- 2 tbsp taco sauce or salsa
- 1 tsp lime juice
- ½ tsp garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package directions. Drain and rinse under cold water.
- In a skillet, cook ground beef until browned. Drain excess grease.
- Add taco seasoning and water. Simmer for 2–3 minutes, then let cool slightly.
- In a large bowl, whisk together sour cream, mayo, taco sauce, lime juice, garlic powder, salt, and pepper.
- Add pasta, taco meat, lettuce, tomatoes, cheese, onion, corn, and black beans. Toss well.
- Fold in crushed Doritos just before serving to keep them crunchy.
- Garnish with jalapeños, avocado, or extra cheese if desired.
Tips
- Chill for 20–30 minutes before serving for the best flavor.
- Add grilled chicken instead of beef for a lighter version.
- Keep extra Doritos on the side for topping leftovers.
