Ingredients

  • 3 large eggs
  • 1 cup (100 g) almond flour
  • 1 tsp baking powder
  • 1 cup (100 g) shredded mozzarella cheese
  • 2 tbsp cream cheese
  • 1 tbsp melted butter or olive oil
  • ½ tsp salt
  • ½ tsp garlic powder (optional)
  • 1 tsp Italian seasoning or dried herbs (optional)
  • 1 tbsp sesame seeds or everything bagel seasoning (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a small loaf pan (about 8×4 inches) with parchment paper or grease it well.
  2. Microwave the mozzarella and cream cheese together in 30-second intervals until melted. Stir until smooth.
  3. In another bowl, whisk the eggs, butter (or olive oil), salt, baking powder, and seasonings.
  4. Mix the egg mixture into the melted cheese, then fold in the almond flour until a thick batter forms.
  5. Transfer the batter to the loaf pan and smooth the top. Sprinkle with sesame seeds if using.
  6. Bake for 30–35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  7. Let cool for at least 15 minutes before slicing.
