Crisp tortillas filled with savory beef, melted cheese, pickles, and tangy sauce for a quick meal.
Ingredients
→ Quesadilla Filling
2 medium flour tortillas
8 ounces ground beef
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 cup shredded cheese
2 tablespoons chopped pickles
1/3 cup chopped tomatoes
→ Burger Sauce
2 1/2 tablespoons mayonnaise
1 1/2 tablespoons ketchup
1 teaspoon pickle juice
1/2 tablespoon chopped pickles
1/4 teaspoon ground black pepper
1/4 teaspoon paprika
Steps
Combine mayonnaise, ketchup, pickle juice, chopped pickles, ground black pepper, and paprika in a bowl. Stir until evenly mixed and smooth. Set aside.
Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spatula, until browned throughout. Mix in salt, black pepper, paprika, garlic powder, and onion powder. Once cooked, remove skillet from heat and drain excess fat if desired.
Layer half of the shredded cheese, cooked ground beef, chopped pickles, and chopped tomatoes on one half of each tortilla. Drizzle with burger sauce. Fold tortillas in half to enclose the filling and gently press edges to seal.
Place folded tortillas in a dry skillet over medium heat. Toast each side for 2 to 3 minutes until golden brown and cheese is thoroughly melted.
Remove quesadillas from skillet, cut into wedges, and serve warm with extra burger sauce and desired toppings.
